Micklethwait Craft Meats
On Fourth of July the kids were with my parents so we decided to do BBQ with a trailer or a line. Micklethwait's was open so off we went to the east side.
Micklethwait's opens at 11 and based on Yelp comments it seemed we did not need to get there too early. We arrived around 10:40. The line had not formed yet - people were lounging in the shade. Around 10:50, people began to form a line and this is how it looked.
There are picnic tables in the shade both in front off the trailer, as seen here, and behind it. People were saving spots on these tables, so we ended up sitting in back.
While in line, you can see the pits. The gentleman in line in front us of had a ton of questions and the gentleman working the pits was happy to answer them.
One of my favorite things about BBQ is how interactive some of these experiences are. You don't get to chat with the chef at most restaurants but it's so common with BBQ.

We ordered brisket, ribs, sausage, grits, and flag cake.
We sat in the the seating area in the back. If the kids were there I would not have felt as safe sitting by cacti.
I feel like I should also warn you that the bathroom is a porta potty.
We got our food around 11:30.
The sausage had a dull bite. The insides were mealy, which I'm not a fan of either (but it is certainly a personal preference). All in all, it was okay.
The lean cuts were very dry. The bark was very nice and peppery. The sauce was excellent and a wonderful compliment to the brisket. (Most sauces seem like an afterthought).
The grits were amazing and we ate most of them.
The cake was adorable. It was also very dry. It had whipped cream icing which I'm very much against.
Butterflies were swarming around and kept landing on us. We are special like that.
I think a lot about ease of obtaining BBQ. If you wanted to experience waiting in line and eating outside in 90 degree weather with minimal wait time, this is an excellent choice.
